AMUSE-BOUCHE: Welcome Champagne Cocktail, Rose Petal Crème Fraîche Sorbet, Vodka with Mint Oil.

FIRST COURSE: Shafer Vineyards | Red Shoulder Ranch | Chardonnay, Napa Valley.

Hamachi Crudo with Kumquats, Red Chili, and Watercress Vinaigrette, or Laura Chenel’s Goat Cheese Fudge with Roasted Wiser Farms Beets, Citrus Segments, and Black Pepper Tuile.

SECOND COURSE: Shafer Vineyards Merlot | Napa Valley.

Roasted Duck Breast with Okinawa Yam Purée, Dried Black Cherry, and Tarragon Sauce. Alternatively, Crispy Skin Salmon with Pancetta, Leek and Yukon Cake, and Merlot Butter Sauce.

MAIN COURSE: Shafer Vineyards | Hillside Select | Cabernet Sauvignon | Napa Valley.

Recipes include Cedar Plank Smoked Mary’s Chicken Breast with English Pea Purée and Foraged Chanterelle Mushroom Sauce, or Charred Australian Kobe Tenderloin with Lobster-Stuffed Morel Mushrooms, Braised Rainbow Swiss Chard, and Hillside Truffle Sauce.

DESSERT: Shafer Vineyards | Relentless, Napa Valley.
